Ingredients
1 tbsp

2-3 cloves 1” knob 400g 1 litre to taste to taste
Oil
Onion, sliced
Garlic, minced
Ginger, minced
Taro Pumpkin, peeled, deseeded and chopped into chunks
Water
Salt
Mushroom or Chicken Powder (optional)
Instructions
1. Heat oil in a medium saucepan, then gently sweat the onions for 3 minutes or until soft but not coloured. Add the garlic and ginger and cook for another 2 minutes.
2. Add the taro pumpkin into the pot, season with a pinch of salt and stir.
3. Pour the water, bring to a boil and reduce the heat to simmer the soup for 15-20 minutes
4. Taste the soup and adjust seasoning to taste!
