French Style Grated Carrot Salad
Servings: 2
Ingredients:
Carrots, grated 300 grams
Parsley, chopped
Dijon mustard 1/3 cup
Oil of choice (canola, grape seed, olive) 1/3 cup
White wine vinegar or lemon juice (or mix!) 1/3 cup
Sugar or honey to taste
Instructions:
1. Make vinaigrette dressing by mixing mustard, oil and wine vinegar and/or lemon juice.
2. Adjust to taste with sugar or honey
3. Mix all and let it soak at least an hour for better taste. (you can also eat right away!)
